On my way up (or down)!

Jethro (my husband) is on call today, so he left for work half an hour early this morning. This means that I've had a bit of extra time to do a few things while Eli sleeps. I decided to make a batch of Mexican Soup, which was created by a friend of mine back home (hi Renee!). I've changed a few tiny things to adapt it to be Slimming World friendly, but it is an excellent syn free recipe as I've calculated it.

The changes that I made to today's batch due to what we had here in the house:
I used Quorn instead of mince.
I used two tins of beans - red kidney beans and white kidney beans. Any beans will work except perhaps baked beans!
I eyeballed the sweet corn instead of measuring it.
I eyeballed the pasta instead of measuring it.
